Raw Courgetti with lemon coulis
Super simple summer food
The subtle , clean flavour of Herbie’s lemon coulis works really well with courgette in this dish.
And it’s a great (not to mention easy) way to top up your happy gut guys (aka lactobacilli).
Why not try adding roasted tomatoes and peppers or sweet and smoky roasted tofu (crunchy sweet paprika and maple bits), for a healthy, tasty plant based meal.
And maybe a side of warm baguette, drizzled with homemade Herbie’s garlic oil.
Now, find a warm sunny spot (or just sit next to a radiator and close your eyes!).
Whatever you pair it with, sit back and enjoy the deliciously balanced blend of sweet and sour basil over citrus.

Ingredients
- 2 courgettes
- 2 tsp Herbie's naturally fermented lemon coulis
- 1 small handful fresh basil
Instructions
- Wash the courgettes in cold water to remove any surface dirt/soil.
- Use a spiraliser to create long spirals of courgetti.
- Finally chop a small handful of basil leaves.
- In a small bowl, lightly stir together the basil leaves with lemon coulis. Set aside.
- Tip the courgetti into a large mixing bowl. Add the lemon coulis with basil mixture and toss gently until the courgetti is completely coated.
- Even distribute the cascades of lemony courgetti into two clean bowls.
- Add a whole basil leaf to each for optional colour and flavour.
