This organic Spanish garlic has been carefully fermented for a minimum of 6 weeks, allowing incredible depth of flavour to develop. Caramelised, sticky cloves are then minced and sealed in a glass jar (ferments generally taste better in a natural vessel made of stone or glass – it’s better for the environment too).
Wild fermentation doesn’t involve adding any starter culture to the ferment. It’s all about the quality of the raw ingredient. That’s why we choose organic Spanish garlic.
Organic garlic that is free from pesticides and other contaminants is the only garlic that we ferment. We never use dried garlic. And we never use cheap, ready peeled garlic. Frankly, we all deserve better than that.
We don’t rush the ferment either. Garlic needs to ferment for a minimum of 6 weeks. Then the colours start to deepen, the flavours to mellow.
Sea salt is the only other ingredient, so you won’t get any nasty vinegar taste as you do from some other minced/pureed garlic brands – just the wonderful taste of pure, raw, unpasteurised, fermented, organic garlic.
This wild fermented garlic paste adds deep richness and savoury warmth to any dish. And pound for pound it is much better value – and better for you- than cheaper alternatives.
Every teaspoon is the equivalent to 1-2 large cloves of garlic but with ten zillion times the flavour. And, with approximately 25 teaspoons in every jar, a little really does go a long way.
Add a teaspoon of fermented garlic paste to button mushrooms, a couple of cherry tomatoes and a splash of olive oil and sauté for 5 minutes for a mouthwateringly quick pasta sauce.
Mix 2 teaspoons with extra virgin olive oil, make a cut lengthways along a self-bake baguette, making sure not to cut right through. Drizzle the garlicky mix inside and bake as normal. Ten minutes later enjoy delicious warm garlic bread.

Our fermented garlic paste and cheese products are packed in glass jars. We do not use plastic packaging.
We use cardboard boxes and fill any gaps with starch based biodegradable chips. If you do ever see any plastic packaging in our boxes, it is being re-used or recycled.
