A delicious, light dish, perfect for a summer lunch. Accompany with roasted mushroom and a tomato and balsamic salad.


  • 2 courgettes
  • 2 tsp Herbie's naturally fermented lemon coulis
  • 1 small handful fresh basil


  • Wash the courgettes in cold water to remove any surface dirt/soil.
  • Use a spiraliser to create long spirals of courgetti.
  • Finally chop a small handful of basil leaves.
  • In a small bowl, lightly stir together the basil leaves with lemon coulis. Set aside.
  • Tip the courgetti into a large mixing bowl. Add the lemon coulis with basil mixture and toss gently until the courgetti is completely coated.
  • Even distribute the cascades of lemony courgetti into two clean bowls.
  • Add a whole basil leaf to each for optional colour and flavour.
